
Caribbean-Styled Pulled Pork Recipe

Ingredients
Pork butt and ribs
Pineapple
Honey
Ginger
Garlic
Thyme
Soya Sauce
Caribbean peppers
Salt
Turmeric
Peppercorns
Apple cider vinegar
Mint
Bay leaves
Cilantro
Nutmeg
Onions (for cooking and fresh for rolls)
Blue cheese (for rolls)
Instructions
Marinade Preparation
1. Blend pineapple, honey, ginger, garlic, thyme, Caribbean peppers, salt, peppercorns, apple cider vinegar, mint, bay leaves, cilantro, and nutmeg together to create the marinade.
2. Pour the marinade over the pork, ensuring it's well-covered.
3. Refrigerate and let marinate for two to three days.
Cooking
1. Pressure cook the marinated pork for about an hour to tenderize quickly.
2. Transfer the pork to a slow cooker and cook on low for 4 to 6 hours until tender and flavourful.
Serving
Shred the cooked pork and serve with capsicum slices / tropical greens
Serve in rolls filled with cooked red beans, freshly cut onions, a splash of lemon juice, and a generous sprinkle of blue cheese for added zest and flavour.
